Richard Blais, who is known for his extraordinary 15 years of experience in the field of cooking, knows best foods for people of all kind. Here is his recipe for eggplant-based caviar that is not only inexpensive but equally great in taste.
Ingredients: An eggplant, a tablespoon of honey, a tablespoon of Sherry vinegar and tablespoon of chopped basil with salt and pepper to taste.
Direction: Take the eggplant and prick it for few times with the help of fork. Preheat the oven at 350°F and line the cookie tray with a foil then cook the eggplant whole for one hour and thirty minutes. Make sure it completely collapse or wrinkles. Now the open the eggplant and take a scoop of its flesh from inside and hand mince it. Let it sit in a colander to dry for few minutes. It will resemble caviar now. Now put in the remaining ingredients and use it for topping.
