Ingredients: An eggplant, a tablespoon of honey, a tablespoon of Sherry vinegar and tablespoon of chopped basil with salt and pepper to taste.
Direction: Take the eggplant and prick it for few times with the help of fork. Preheat the oven at 350°F and line the cookie tray with a foil then cook the eggplant whole for one hour and thirty minutes. Make sure it completely collapse or wrinkles. Now the open the eggplant and take a scoop of its flesh from inside and hand mince it. Let it sit in a colander to dry for few minutes. It will resemble caviar now.
